Recipes

The following recipes are published for the use and enjoyment of consumers of fine Australian walnuts.  Otway Walnuts makes no claim regarding ownership of the recipe (if that is possible) and acknowleges the source of the recipe in all instances if that is possible.  If any of these recipes merits acknowledgement please contact us. Conversely, if you find a recipe that you may wish to improve, alter or have removed please also let us know.

Walnut Cake

 

This recipe was generously donated by Mrs Tobin of Victoria, Australia

 

Ingredients

​

  • 1.5 Cups of Self-Raising Flour

  • 1 Cup of Castor Sugar

  • 2 Teaspoons of Cinnamon

  • 1 Teaspoon Nutmeg

  • 1 “Pinch” of Salt

  • 125 Grams of Butter

  • 3 Eggs

  • 1/2 Cup of Milk

  • 3/4 Cup of finely chopped Walnuts

 

Method

​

  1. Cream the Butter, Sugar and add Eggs one at a time while beating well.

  2. Mix the Flour and Spices alternatively with the Milk.

  3. Place in tin and bake in medium Oven for 3/4 to 1 hour.

  4. Allow to cool and ice with lemon Icing.

 

Serve

​

Allow to cool and slice into individual portions.

Walnut Delights

Pastry Ingredients

​

  • 125 Grams of Self Raising Flour

  • 125 Grams of Plain Flour

  • One “Pinch” of Salt

  • 125 Grams of Butter

  • 1 Egg Yolk

  • 2 Tablespoons Castor Sugar

  • 2 Tablespoons of Water

 

Filling Ingredients

​

  • 65 Grams of Butter

  • 95 Grams of Sugar

  • 1 Egg

  • 3/4 Cup of finely chopped Walnuts

 

Method

​

  1. Sift the Flour and Salt

  2. Rub in the Butter and add Sugar

  3. Mix with the yolk of the Egg and Water (recommend using a food processor)

  4. Place one desert spoon of filling into each shell

  5. Bake in medium oven for 20 to 25 minutes.

 

Serve

​

Allow to cool and serve.

Wholemeal Nut Loaf

Ingredients

​

  • 180 Grams Wholemeal Flour

  • 1/4 Teaspoon Salt

  • 1/2 Teaspoon mixed spice

  • 65 Grams Butter

  • 65 Grams Castor Sugar

  • 1 Egg

  • 1/2 cup Walnuts (Chopped)

  • 4 Tablespoons of Sugar

 

Method

​

  1. Sift dry ingredients into a bowl,

  2. Add in butter, sugar and chopped walnuts

  3. Beat the egg, add milk and add to the flour mix

  4. Mix until it reaches a soft dough

  5. Place in a greased loaf tin

  6. Bake 30-35 minutes or until cooked

 

Serve

​

Slice and serve with butter.
